Cremant du Jura
Grapes for this Crémant are picked and pressed whole-cluster. Fermentation begins in stainless steel, where the wine remains for aging. The second fermentation is jump-started in the bottle by an addition of yeast and sugar, and the wine is bottled at the beginning of April. After twelve months of settling, the bottles are then agitated and loaded onto a riddling rack where they are turned daily for a week. The wine is then disgorged and sealed using a cork and cage after a small addition of a liqueur d’expédition.
