Made from 50-55 year old vine Mondeuse, grapes are hand-selected and gently carried to the tank for a twelve hour long cold maceration. Only natural yeasts are used, and wine is left on the skins about two to three weeks before being aged in demi-Muid (600 L) barrels used two to three times prior.
