This wine has floral violet and rose perfume punctuated by cinnamon spice and mushroom earthiness. The palette is intense and long, with black currant acidity, Morello fruit, savoury spice and soft tannin. There are earthy flavors like beetroot and certainly meaty, hung game nuances.
The finish has typical Pinot Noir silkiness as well as layers of soft tannin. Holly’s Garden Pinot Noir is terrific with sweet “fatty” meats, poultry, pork and duck due to its fine tannin and soft, black currant acidity and its, “gaminess” compliments a range of game birds and meats.
