From a parcel called “Le Pré du poirier,” vines are planted in sandy soils near Pierreclos. On average, Arnaud’s Aligoté vines are about 25 years old. Grapes are harvested and pressed together without maceration. Fermentation begins in stainless steel tanks with indigenous yeasts at low temperatures. The wine is also aged in stainless steel for about ten months, after which a very small amount of sulfur (3g/hL) is added before the wine is racked off the lees for bottling. Only 6,000 bottles were produced.
